rainbow jello


 Ollie asks if we can make jello almost every night. We only make it once a month if that. But sometimes we go all out and make rainbow jello. The boys LOVE it!

You just make the jello like usual, but instead of putting cold water, I put ice in to speed up the process. Just use a cup of ice instead of water and stir until dissolved. Pour only half of the jello in the pans, leaving the other half for the next step. 
(I used the big boxes of jello so I could make a few at a time, but if you're only making one pan, use the small box.)

Then as the first clear layer is hardening in the fridge, mix 1/2 cup plain yogurt in with the other half of the jello in the pan, which gives you an opaque layer in the same color. Wait for the first layer to harden (15-20 min?) before you pour the second opaque layer on, but don't wait too long because then the layers won't stick together. The opaque layer hardens faster... 10-15 min maybe.

 Keep adding layers until you're done!

  I usually top ours with fresh whipped cream, but the boys didn't want it on theirs this time... next time we'll just leave it off.
This would be fun to have on St. Patrick's Day, but we usually have it in the summer and at family functions.
